卧式电脑半自动单锅杀菌锅

设备特点:

1、罐内温度非常稳定、热分布均一,为保证罐内各点的热分布更均匀,热水喷淋系统在处理罐内每一个托盘的四个角上均设有一系列喷嘴。此外,将喷嘴设置在每一层托盘之间,因此可得到非常广泛的喷淋模式。由于从垂直安装在各托盘四个角上的喷嘴中连续喷淋水,使罐内温度在杀菌过程中的所有阶段始终保持稳定状态,从而减少了F值的变化及蒸煮过度等现象的发生。

2、升温快

  由于锅内只有少量循环水,并采用高效率换热器,所以,食品升温速度快,一般情况下,在蒸汽压力为0.6Mpa时,食品从20度升到121度,只需8分钟,这样可以大限度的保留食品的风味和色泽,也能降低能源的消耗。

3、间接加热和冷却,阻止二次污染

  循环水通过板式热交换器被间接地加热或冷却,同时在降温时,将同一处理用水通过板式热交换器连续进行循环冷却并冷却产品直至完成预定的杀菌处理过程。因此,再循环水在冷却之前已经被杀菌且设备上带有蒸汽冷凝水(纯净水)回收系统,作为杀菌用的循环水,杀菌完毕,锅内表面和包装袋表面的水滴晾干后,也不会留下白色的水垢小点,整个包装袋透明、干净,阻止二次污染。

4、适合各种不同的包装物

  由于在降温过程中,不是直接向锅内注入凉水,所以对于易碎的玻璃瓶包装,可以采取柔和的降温速度,避免由于温差过大引起瓶的破碎。这一特点也适合贝类的内容物,如蛤类,降温温差太大,或升温温差太大都会引起壳的破碎。

5、完善的压力控制,适合含气包装的杀菌

  我们已获得的压力平衡系统对内含气包装的杀菌至关重要,尤其是在升温或降温阶段,需要精确的压力控制。“PACKACE”控制系统可对处理罐内的温度和压力进行连续监测,并对罐内压力进行校正以便使其与包装内的压力相应。对于内含任何百分比的填充空气或气体的包装,或者在真空下密封的包装均可进行杀菌处理,而不会使包装或其内容物受到破坏或变形。本系统不同于其它系统,可将适用于任何产品的各种压力模式预先编制成程序输入计算机中。

6、控制系统

   A、利用屏幕进行触摸控制,而不是开关。

   B、图表平板,不是刻度表。

   C、所有时段均由模拟感应器和自动阀控制。

   D、可以从单一杀菌工艺切换成多阶段杀菌工艺。

   E、压力和温度呈数字化显示。

   F、所有的过程都被记录在磁盘上。

7、杀菌釜采用模拟温度控制系统,敲定多阶段加热机制

  根据不同食品对灭菌条件的要求,随时设定不同的升温和冷却程序,可利用多阶段的加热的杀菌方式,使食品承受的热量限制到小*,以尽可能*地保存其风味、口感和色泽,使每一种食品均可在佳状态下进行调理灭菌。精确的杀菌温度(±0.5℃)可以避免因高温高压加工法而产生的蒸煮异味。

8、测量F值的功能

  我公司生产的每台喷淋式杀菌锅上都已安装了可配置测量F值的功能,F值软件每隔3秒进行一次F值计算。所有灭菌数据,包括灭菌条件、F值、时间-温度曲线、时间-压力曲线等均可通过数据处理软件处理后予以保存或打印,以便于生产管理。
